Ingredients: 2 brinjals, 2 tbsp tahini, 1 garlic clove (minced), juice of 1 lemon, 2 tbsp olive oil, salt and pepper.
Instructions: Roast brinjals over an open flame or in the oven until the skin is charred and soft. Peel and blend the flesh with tahini, garlic, lemon juice, olive oil, salt, and pepper until smooth. Serve with fresh veggies or pita bread.
